Kappabashi Food Models

So apparently, I a food miniature collector, (for Re-ment products) and I came across this kappabashi street videos, featuring a street of food models. It's interesting, especially when I watched the videos of people demostrate how to make tempura or cabbage food models. The question is this. How are the wax models moulded? Is there any rationale behind it or is it plain moulding?
